Cinnamon-Sugar Rhubarb Cake

Today, I made a Cinnamon-Sugar Rhubarb Cake.
1/2 cup shortening
1 cup packed brown sugar
1 cup sugar, divided
1 egg
1 teaspoon vanilla
2cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 cups diced fresh or frozen rhubarb
1 teaspoon ground cinnamon

In a large mixing bowl, cream shortening, brown sugar and 1/2 c. sugar until light and fluffy. Add egg and vanilla; beat for 2 minutes. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in rhubarb.

Pour into a greated 13 x 9 baking dish. Sprinkle with cinnamon and remaining 1/2 c. sugar. Bake 350 for 40-45 minutes. Serve warm.
